A must for the absolute best potato dish. Whether you just boil them and mash them with the skins on or slice them add a little garlic and parsley, they are a favorite on any table or feast.
Mom Mom's recipe:
Old Fashioned Baked Red Skin Potatoes
2 pounds of red quartered organic red skinned potatoes
1/4 cup organic virgin olive oil
2 teaspoons organic granulated garlic
1 teaspoon organic sea salt
1 juiced organic lemon
1/2 teaspoon of organic sweet basil
1/2 teaspoon of organic grounded black pepper
1 teaspoon of organic chives
1 teaspoon of organic paprika
Preheat oven to 350 degrees.
Arrange potatoes in a small baking dish with the skin side down.
In a bowl combine olive oil, garlic, sea salt, lemon juice, sweet basil, crushed oregano; black pepper, and chives. Using a basting brush, rub potatoes with this sauce until all are covered and sauce is gone. Sprinkle Parmesan paprika evenly over potatoes.
Cover with tin foil and bake, for 30 minutes. Then uncover and brown the potatoes another 10 minutes or so.
