Orecchiette Rigate originates from the Puglia region of southern Italy. From the Italian for "little ears," Orecchiette Rigate is traditionally blanched with vegetables and served with tomato based sauces. Made with organic durum wheat semolina using traditional bronze dies, this pasta has a rough textured surfaces which allows it to better capture and hold sauces once cooked.
